Lesley’s Secret Ingredient Carrot Cupcakes 🧁✨

**Ingredients (Makes 12):**
- 1 ½ cups flour, 1 tsp baking powder, ½ tsp baking soda, ½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp salt
- 1 cup sugar, ½ cup oil, 2 eggs, 1 tsp vanilla, 1 ½ cups grated carrots, zest of 1 orange (secret ingredient!)
- Optional: ½ cup chopped nuts or raisins

**Frosting:**
- 4 oz cream cheese, ¼ cup butter, 2 cups powdered sugar, 1 tsp vanilla, 1-2 tsp orange juice

**Instructions:**
1. Preheat oven to 350°F and line a muffin tin.
2. Whisk dry ingredients in one bowl.
3. Mix sugar, oil, eggs, and vanilla in another. Stir in carrots and orange zest.
4. Combine wet and dry ingredients; fold in nuts/raisins if desired.
5. Divide batter into liners and bake 18–22 minutes. Cool completely.
6. Beat frosting ingredients until creamy.
7. Frost cupcakes, garnish with zest or nuts, and enjoy!
